When your thoughts are scrambled and picking something to eat seems like an impossible task, just go for making some quick scrambled eggs. Being sad on a full stomach is so much better than sad on an empty stomach. I know, what a shocker! You can even add a couple of cherry tomatoes and a slice of cheese to the plate for extra simple nutrition.
- 2 eggs
- 1 teaspoon butter/ oil
- Crack the eggs in a bowl and add salt.
- Use a fork to whisk the eggs.
- Heat a non stick pan and add the eggs.
- Use a spatula to stir the edges of the egg mix and bring it to the center and keep doing that until the eggs are cooked and solid.
